Main Dishes and Casseroles


  • Cashew Chicken
    1. Cut 1 1/4 lb boned chicken into small pieces.
    2. Roll pieces in beaten egg and flour.
    3. Fry.
    4. Thicken 1 can chicken broth with cornstarch.
    5. Add 1 to 2 tablesppons soy sauce.
    6. Chop green onions and 6-8 oz of cashews.
    7. Add to sauce
    8. Serve over rice.

  • Cheese and Bacon Quiche
    • 9 in pie shell
    • 1/2 lb bacon fried and crumbled
    • 1 1/2 cup light cream
    • 1 1/2 cup grated cheese
    • 3 eggs
    • 3/4 tsp salt
    • dash nutmeg, pepper and cayenne pepper
    1. Crumble bacon and put in pie shell
    2. Add cheese and other ingredients.
    3. Bake at 375 for 35 minutes or until brown on top
    4. Cool ten minutes before cutting.

  • Zuchinni Quiche
    • 1/2 lb sausage sliced
    • 3/4 cup Bisquick
    • 1 small chile pepper
    • dash of garlic
    • salt and pepper to tast
    • 3 cups zuchinni sliced thin
    • 1/2 cup chopped onion
    • 3 tablespoons green pepper
    • 1 large tomato (cubed)
    • 3 eggs
    • 1 1/2 cup milk
    1. Saute sausage, onion, garlic and pepper
    2. Saute zuchinni
    3. Put zuchinni, then sausage in pan.
    4. Top with eggs, bisquick, and milk.
    5. Bake at 375 for 35 minutes or until brown on top.
    6. Cool 10 minutes before cutting.

  • Zuchinni Casserole
    1. Combine:
      8 cups diced zucchini (unpeeled and seeds removed)
      1 large and 1 medium diced onion and 2 sticks butter.
    2. Sauté until vegetables are clear.
    3. Layer onion and zucchini mixture alternately in a casserole with stuffing dry bread mix.
    4. Sauce:
      Combine 1 can mushroom soup, 1 soup can of milk, 1 can cheddar cheese soup and the packet of stuffing seasoning.
    5. Mix and pour over mixture in casserole.
    6. Bake at 350 until bubbly.

  • Creamy Hasbrown Casserole
    • 1 pkg frozen southern style hash brown potatoes
    • 1 lb American cheese cubed
    • 1 can condensed cream of chicken soup
    • 2 cups sour cream
    • ¾ cup butter melted, divided
    • 3 tbs chopped onion
    • 4 tsp paprika
    • 2 cups cornflakes slightly crushed
    • Fresh savory optional
    1. In a large bowl, combine hash browns, cheese, soup, sour cream, ½ cup butter and onions.
    2. Spread into a greased 13x9x2 baking dish.
    3. Sprinkle with paprika.
    4. Combine corn flakes and remaining butter.
    5. Sprinkle on top.
    6. Bake uncovered at 350 for 50-60 minutes or until heated through.
    7. Garnish with savory if desired.

  • Hominey Casserole
    • Drain 2 can yellow hominy with red pepper in it
    • Combine:
      • 1 can mushroom soup
      • 1 chopped onion (1/4 cup dry onion)
      • 2 t chili powder
      • 1 small jar cheese spread or Velveeta
    • Melt mixture in pan and pour over hominy in casserole.
    • Top with corn chips or cracker crumbs.
    • Bake at 375 for 30 minutes

  • Zuchinni Fritters
    • 2 med zucchini
    • 1 tsp salt
    • 1 carrot (grated)
    • 1 T minced onion
    • 1 egg beaten
    • ½ cup flour
    • dash salt or pepper
    1. In colander mix zucchini and salt.
    2. Let drain about 15 minutes.
    3. Squeeze out excess liquid.
    4. With back of spoon mix well zucchini, carrot, onion, egg, flour, and pepper.
    5. Drop by spoon into 1 in hot oil.
    6. Fry until brown on both sides.
    7. Drain on paper towels.

  • Baked Chicken and Rice
    • 1 can cream of mushroom soup
    • 1 cup water
    • ¾ cup cooked long-grain rice
    • ¼ tsp paprika
    • ¼ tsp pepper
    • 4 boneless, skinless chicken breast halves
    1. In shallow baking dish, mix soup, water, rice, paprika, and pepper.
    2. Place chicken on mixture.
    3. Bake 375 for 45 minutes or until done.

  • Old Settler's Beans
    • Cook until done and drain:
      • 1 lb hamburger
      • ½ cup chopped bacon
      • medium onion chopped
    • Mix :
      • 1/3 cup brown sugar
      • 1/3 cup white sugar
      • ¼ cup catsup
      • 1 T prepared mustard
      • ¼ cup BBQ sauce
      • ½ tsp chili powder
      • ½ tsp pepper
      • 1 tsp salt.
    • Stir in meat, 1 can kidney beans, 1 can lima beans, and 1 22 oz pork n beans.
    • Bake at 250 for 1 hour

  • Poppy Seed Chicken
    • 4 chicken breasts cut into bite size pieces (cooked)
    • 1 cup sour cream
    • 1 can cream of chicken soup
    • about 40 ritz crackers
    • ½ cup butter
    • 4 T poppy seeds
    1. Add chicken to sour cream and chicken soup.
    2. Crumble crackers and brown in butter.
    3. Put chicken mixture in a 9x9 pan or dish.
    4. Cover with cracker mixture.
    5. Sprinkle with poppy seeds.
    6. Bake at 350 for half hour

  • Meat Loaf
    • 1 lb ground chuck
    • ½ cup quick cook oats
    • 1 beaten egg
    • ¼ cup chopped onion
    • 1 t salt
    • ½ t pepper
    • 2/3 cup tomato juice
    1. Combine all ingredient thoroughly.
    2. Pack firmly into a loaf pan. Cover with half of the following sauce:
    • ¾ sauce catsup
    • 1/8 cup water
    • 1 t mustard
    • ¼ cup brown sugar
  • Bake in an oven 30 minutes at 350.

    Then add the rest of the sauce over meat loaf and bake an additional 30 minutes.

    Let stand 5-10 minutes before slicing and serving
