  • Pecan Pie
  • Pralines

  • Pecan Pie (from the Southern Recipe Series)
    • 3 tablespoons margarine
    • 5 egg yolks
    • 1 cup sugar
    • 1 cup white Karo syrup
    • 1 cup broken pecan pieces
    • 5 egg whites, well beaten
    • Vanilla to taste
    • Unbaked pastry shell
    1. Cream margarine, sugar and egg yolks.
    2. Add syrup, vanilla, and pecans and stir well.
    3. Fold in egg whites.
    4. Pour mixture into unbaked pastry shell and bake slowly at 325 for one hour until custard-like in consistency.
    5. Serve with ice cream or whipping cream if desired.

 

  • Pralines (from the Southern Recipe Series)
    • Bring to boil in a very large saucepan:
      • 2 cups white sugar
      • 3/4 cup Pet mil
      • 2/3 cup boiling whater
      • 1/3 cup white Karo syrup
    • Add 1/2 teaspoon soda and bring to boil again.
    • Add 2 cups pecans
    • Stir constantly, continuing to firm ball stage.
    • Remove from heat and beat until it thickens and loses shiny gloss.
    • Drop by spoonfuls onto wax paper
    • Add teaspoon hot water if it becomes too hard.
    • may be frozen or kept in an air tight container.
    • A teaspoon of vanilla may be added at the end of cooking.
